I only recently started using buckwheat in smoothies, and I was amazed at how it makes them so creamy and filling. Not too long ago they sent me some samples including a cool shaker bottle and a full-size of their Green Kingdom (which I’m a big fan of as well). I think my favorite will always be the Chocolate Maca with the Vanilla Lucuma as a close second. In case you’re not familiar with lucuma or maca, both are considered “superfoods” for their nutritional benefits. However, what I really love about them is the unique flavor that they add to any smoothie. Throwing them into your favorite recipe really kicks things up a notch. These protein powders from Sprout Living are perfectly balanced with ingredients so that you get the superfoods with delicious flavors that are ready to be used.

Vanilla Lucuma Buckwheat Shake

A high-protein, gluten-free, lower-in-fat shake made with Sprout Living's Vanilla Lucuma from their EPIC Protein Line.

Ingredients
  1. 1 1/4 cup cold, filtered water
  2. 1/4 cup buckwheat, pre-soaked and drained
  3. 1 pitted date, soaked and drained
  4. splash of vanilla and/or almond extract
  5. 1 frozen, sliced pear
  6. 1/2 tsp maca powder
  7. 1 pack/serving EPIC Protein: Vanilla Lucuma
  8. pinch of cinnamon and nutmeg
Instructions
  1. Place all ingredients into a blender and mix until you get a smooth and creamy consistency. Add additional sweetener or ice if needed.

Raspberry Chocolate Chip Shake

A super delicious and healthy vegan Raspberry Chocolate Chip Shake @anotherhungryvegan.comI’ve had a few Sprout Living smoothie recipes on my mind lately, and I couldn’t wait any longer to share them with you! If this is the first time you’re hearing about Sprout Living, well basically they make a line of super nutritious, raw, gluten-free and vegan protein powders. One of my favorite flavors of all time has been their EPIC Protein: Chocolate Maca. Sprout Living recently reformulated their line, and I was eagerly waiting in anticipation to try it out! The first recipe I made with their reformulated Chocolate Maca is for this Raspberry Chocolate Chip Shake, which isn’t your standard protein shake. This one is filled with protein and healthy fats, without any artificial sweeteners or color additives. A big thanks to the company for sending over samples, and for inviting me to be one of the Healthy Vegan Chefs on their website! If you’re looking for more of my recipe experiments using their products, I actually have quite a few on this blog that you are more than welcome to check out. I’ve made smoothies before with just almond milk, a banana and the protein (and maybe a date or two) and even the simplest combinations have turned out phenomenal.

Green Superfood Protein Pancakes

Why have regular pancakes when you can make these healthy and delicious Green Superfood Protein Pancakes? @anotherhungryvegan.com Who doesn’t love pancakes for breakfast? I swear these are healthier and lower-in-fat than your standard pancakes and other sweet breakfast items. I’m super excited that Sprout Living has recently reformulated their line of EPIC Protein, and they sent a few samples for me to experiment with in the kitchen. Their Green Kingdom is packed with superfoods and greens including sacha inchi, chlorella, spirulina, kale, moringa and many more! One serving is 20g of raw, organic and gluten-free plant protein. I’ve been experimenting with protein-packed breakfast items besides smoothies such as protein oats and banana ice cream, and pancakes were just calling my name. That’s what weekends are for, right? There’s just something about sitting at the table with your family that makes the food even better. If you’re going to make a home-cooked meal, why not make the most of it? I challenge you next weekend, to have brunch with your family or invite some friends over. And if you need something to make, these pancakes aren’t a bad choice! They’re also a double-win if it’s around St Paddy’s Day!

These pancakes end up coming out slightly green from the protein powder, but they taste so incredible you won’t even notice it! Sprout Living’s new line of proteins are great in smoothies, but I felt a little adventurous and decided to use them in a super easy breakfast recipe. No blender required, all you need is a mixing bowl, stovetop and pan but you still get a lot of the benefits that you would if you used this protein in a smoothie. Even if you have picky eaters in your house, they won’t even be able to tell that these contain a ton of superfoods in them!

I think we all know the magical moment when you pour the syrup on your pancakes and are just about to dig in. The best part of these nutritious pancakes aside from the flavor is that they’re super filling. That means you can sleep in and have these for a late breakfast and likely be full until dinner time.

Ingredients
  1. 1 cup vanilla-flavored almond milk
  2. 1 tsp apple cider vinegar
  3. 1 Tbs ground flaxseed
  4. 2 Tbs unsweetened applesauce
  5. 1 cup whole-wheat flour
  6. 2 scoops Sprout Living EPIC Protein: Green Kingdom powder
  7. 3 Tbs baking powder
  8. 2 Tbs coconut sugar (or other vegan sugar)
  9. pinch salt
  10. 1/4 + 1 Tbs water
  11. maple syrup, vegan butter or fruit and nuts for toppings
Instructions
  1. 1. To make a vegan buttermilk, pour and stir the apple cider vinegar into the pre-measured almond milk and let sit for a couple minutes. Add the flaxseeds and mix until you get a smooth consistency.
  2. 2. Mix together the dry ingredients in a large bowl. Incorporate the wet mixture into the dry, adding the water and mixing until a batter forms. Be careful not to overmix.
  3. 3. Place a non-stick pan over medium heat and/or use cooking spray. Pour the batter onto the pan to make pancakes that are roughly 5 inches in diameter. Once they start to form bubbles, flip the pancakes cooking for 2-3 minutes on each side.
  4. 4. Serve with jam, peanut butter, nuts, vegan butter, syrup, and/or fresh fruit and enjoy!
Notes
  1. These pancakes can be made ahead of time and frozen to meal-prep for the week. Just wait until the pancakes cool completely and then place them into an airtight ziplock bag. Let them thaw briefly at room temperature and reheat using a microwave, oven or toaster oven.

Remember when I said I would do another smoothie with Cocozia’s coconut water? Well, here it is! I was really in the mood for chocolate this time while wanting to keep it on the healthy side. If you didn’t get the chance to read my review on their coconut water, you can check it out here along with a bonus recipe. This smoothie ends up being a potassium packed, energizing and hydrating drink all in one. It’s perfect for either after your workout, or if you’re looking for a filling but still healthy chocolate treat during the day. Coracao Confections Almond Butter and Nib Spread
This is another smoothie using Sprout Living’s EPIC Chocolate Maca Protein. I am obsessed with adding this to smoothies for that malty cocoa taste it adds. This protein is raw, organic, and made with sprouted brown rice. I find that it digests really easily and it’s a great coffee-free energy boost in the morning.

I also got the chance to try out Coracao Confection’s decadent Rawmond & Nibs Spread in this recipe. Coracao sells a wide variety of excellent, healthy chocolates that you can tell are made with nothing but love. The ingredients in here include raw almond butter, cacao nibs, coconut sugar, cacao butter, maca, and Himalayan pink salt. It’s great on its own, but I love adding it to a smoothie to give it a more rich taste. Plus I can’t complain about the added protein and healthy fats. I’ll be doing a review sometime in the new year featuring Coracao’s chocolates, truffles and other products so stay tuned!

What I really love about this smoothie is that it’s actually a great recovery drink after exercise, or if you wake up needing an extra boost of energy (without the coffee). The coconut water is rich in electrolytes to help with muscle cramping I find that it’s perfect to enjoy during the holidays in place of indulging on vegan chocolates, cookies and cake (although everything in moderation is fine in my book). You can absolutely try some variations on this smoothie, such as using peanut butter instead of the almond butter or even raw cashews or almonds to make your own milk in the blender. Next time, I will definitely add some mint extract to make it more festive!

  2. splash almond/flax milk
  3. heaping tbs Coracao Confections Rawmond & Cacao spread (can sub for raw almond/other nut butter and cacao nibs)
  4. dash of cinnamon
  5. pinch of salt

  7. 1 frozen banana
  8. 2 scoops maca chocolate protein powder
  9. ice
Instructions
  1. 1. Place the coconut water, non-dairy milk and almond butter into the blender and mix until you get a smooth, milky consistency.
  2. 2. Add the pitted date, cinnamon, salt, protein powder, banana and ice and blend until well-mixed.
  3. 3. Add additional ice or sweetener if needed, pour into a glass and enjoy!
