LÄRABAR: Food Made From Food + Giveaway

I had first heard about LÄRABAR years ago and I was so intrigued because they are truly a one of a kind bar. Unlike many other snack bars out there, LÄRABARs don’t come with a long list of
ingredients, which is such a relief when you’re just looking for a quick snack! With flavors like Peanut Butter Cookie, Banana Bread, Blueberry Muffin and more, it’s always been tough to choose just one. I appreciate that LÄRABAR makes so many different varieties of their original bars, which also happen to be vegan and gluten-free so a lot of people are able to enjoy them!

Peanut Butter Cookie LÄRABARAs I already mentioned, the Peanut Butter Cookie LÄRABAR has been one of my long-time
favorites. Can you guess what the ingredients are? Literally just dates, peanuts and sea salt…but it’s amazing that it genuinely feels like you’re eating a cookie when you snack on this bar. It’s a lot more satisfying (and far less messy) than just eating peanut butter on a spoon, and it definitely helps curve any cravings for sweets, at least in my experience.

#FoodMadeFromFoodSometimes when I’m feeling a little extra hungry, I’ll take a LÄRABAR and turn it into a full meal. They make excellent smoothie or banana ice cream toppers, and I find that I’m a lot more full when I eat the LÄRABAR with something like a smoothie…as opposed to just having the smoothie on its own. To feel my best, I try to keep my meals and snacks to as few ingredients as possible. With just 2-9 simple ingredients per bar LÄRABAR is something that fits with my daily routine and goals to stay feeling as good as possible.

together for myself. I always keep a stash of LÄRABAR’s on hand, whether it’s by storing some in my car, purse, or just around my kitchen. Oh and in case you were wondering, LÄRABAR’s Cherry Pie bar has just dates, almonds and unsweetened cherries!


I love how easy it’s becoming to find LÄRABAR at almost any major grocery store, which to me is a sign that things are changing! I always get so excited when I see people snacking on them
instead of other less-healthy options. LÄRABAR was first established to make easy, accessible, and real food available to as many people as possible, and they are doing an excellent job
keeping that passion going!

No-Bake Chocolate Peanut Butter Cheesecake Bites

NO-BAKE CHOCOLATE PEANUT BUTTER CHEESECAKE BITESRecently, I teamed up with Amazing Grass to come up with a recipe featuring their Chocolate Peanut Butter flavored Protein Superfood. Even though the weather is finally starting to cool down, I still wanted to create an easy no-bake recipe that likely uses ingredients that you already have on-hand. An added challenge was making something that was gluten-free, soy-free, oil-free, vegan and obviously tasty! This post was sponsored by Amazing Grass, but all opinions on the product are completely my own. I have a lot of great things to say about it!

I’ve been pleasantly surprised by this new product from Amazing Grass, since it’s not only a protein powder but is also packed with superfoods and other nutrients. The flavor is exactly as it sounds, but neither the chocolate nor the peanut butter is too overpowering. This product does have a little stevia in it, but I found it to be a lot more subtle than other protein powders I’ve tried in the past. When I’m not making no-bake recipes like this, my go-to way to enjoy Amazing Grass is to throw it in a blender with a little non-dairy milk, frozen bananas and ice. The nutrition facts are impressive per serving and you can’t go wrong with this flavor, especially!

img_4044No-Bake Chocolate Peanut Butter Cheesecake Bites
These individual-sized cheesecake bites are a cinch to make and use only a few ingredients. They are gluten-free, vegan, soy-free and even have some hidden fruits and veggies in them! Your friends will be amazed when they find out how simple, yet delicious this recipe is!

Ingredients – Crust:
1/4 cup oats
1/4 cup peanuts
1 Tbs maple syrup

Ingredients – Filling:
1/2 avocado
1 serving Amazing Grass Protein Superfood, Chocolate Peanut Butter
1 small banana
1/4 cup peanuts
2-4 Tbs almond milk

Directions:
1. Place the oats and peanuts in a high speed blender and mix until you get a flour-like consistency. Add in the maple syrup and continue blending until the mixture sticks together.
2. Using a cupcake pan, place the crust mixture into 4 wells of a cupcake pan making sure to press into the bottom of the pan. Place in the freezer while preparing the filling.
3. Put all ingredients for the filling into a blender, and blend until you get a smooth and creamy consistency. Start with less almond milk and add more if needed. Pour this mixture into the cupcake pan on top of the crust.
4. Freeze the cupcake pan with the filling and crust for 1-2 hours so it can set. Remove from the freezer and use a butter knife or something similar to remove the bites from the pan if needed. Allow to thaw for 5-10 minutes before eating and enjoy!

*Note: these are best when enjoyed straight from the freezer. Thawing and re-freezing is not recommended.

Amrita makes a lot of unique-flavored nutrition bars, that not only taste great…they are also made with really high-quality ingredients. Review of Amrita Bars on anotherhungryvegan.comThe first bar I tried happened to be the Apricot Strawberry. When I first opened the package, the smell actually reminded me of a PB&J sandwich (despite being completely free of peanuts and gluten). I think I was picking up the sunflower seeds and tahini, which often give off a rich and nutty flavor. Once I tasted the bar I could taste the apricots as well as the strawberries and dates mixed in. I couldn’t taste the chia flour or brown rice and they didn’t seem to affect the texture at all. Overall, I would say this was a great bar to start out with!

Review of Amrita Bars on anotherhungryvegan.comI’m not sure what paradise would taste like, but it must be something like this Pineapple Chia bar. First off, with it being summer I find that these bars all have really appropriate flavors. Along with pineapple, this treat also contains cranberries, sunflower and sesame seeds, chia seeds, coconut and brown rice protein. It’s great that a little bar like this also has the benefit of omega 3 and 6 essential fatty acids, along with 4g of fiber and 7g of protein!

Review of Amrita Bars on anotherhungryvegan.comOne of my favorite bars, not surprisingly, was the Apple Cinnamon. This seriously tasted like apple pie in bar form. What I love about Amrita bars is that you get so much fresh flavor, and all without added sweeteners other than the ones in dried fruit. I find that these bars are similar in texture to Larabars, but the combination of seeds, brown rice protein and dried fruit makes them a lot more filling. These definitely are more of a snack than a meal replacement, but they are really satisfying in-between meals!

When it comes to dried fruit, mango and coconut are some of my favorites for their ultra-sweet flavors. Because this bar is also balanced with a mix of seeds, you don’t get as much of a sugar rush as plain fruit can often deliver for some people. This bar would be also be delicious if you blended it into a smoothie (seriously), or if you cut it up and placed it on top of a smoothie with banana, mango and coconut.

I was worried that the Cranberry Raisin bar might be a little sour, but I think it was another winner! The texture reminds me a little of an oatmeal raisin cookie and I’m not complaining! I notice that many of the bars are made with similar ingredients, but with the addition of the special dried fruits they really take on a unique taste. Plus, they don’t make a mess when you eat them and are very portable and for a snack that also happens to be raw.

Review of Amrita Bars on anotherhungryvegan.comLast but not least…the Chocolate Maca bar. Where oh where do I begin with this one? Cacao and maca are an incredible combination,  and this bar proves that. These superfoods are great for giving you energy as well as helping with hormonal issues. Another fantastic thing about this chocolatey bar is that it doesn’t melt in the heat, unlike many energy/protein bars made with chocolate. Though the flavor sounds more like a sweet dessert, this actually makes a great morning or mid-morning snack. Instead of reaching for coffee or energy drinks, I would recommend picking up one of these instead.

IMG_0007-1Fresh N’ Lean has a menu that rotates, so you always get the opportunity to try a wide variety of meals. You have the option to order a meal plan, either 5 or 7 days, based on how many meals you would like. Fresh N’ Lean also offers à la carte dishes, as an alternative if you aren’t ready to commit to a meal plan just yet. This is a great way to try out the meals before subscribing to a delivery service, and you get to preview the dishes and get their nutritional facts/ingredients before placing your order. 

IMG_0033-1One of the first meals that I tried fromFresh N’ Lean was the Blueberry Cinnamon Oatmeal. This was filled with organic ingredients such as oats, maple syrup, walnuts, blueberries, raisins, almonds, dates, vanilla and cinnamon. This meal was extra filling, energizing and easy to digest. The best part? It tasted incredible (like something you would get at a restaurant), and there were no artificial ingredients or preservatives added. This means that you have to consume the foods by the “best by” date on the package, but that’s the whole point! These meals are so tasty and easy to prepare that there really is no good reason for why they would sit in your fridge and go bad.

IMG_0304-1 The next meal that I tried for dinner was the Fiesta Black Beans. These were made with black beans, cabbage, bell peppers and other veggies. Now, I have to say that the initial color wasn’t super appetizing because the black beans were mixed with the veggies. However, the aroma was wonderful, and so was the taste! The other people in my household were wondering what was cooking because it filled the kitchen with such a great smell. Fresh N’ Lean recommends adding your own spices to these dishes, although I thought they were plenty flavorful without them. I do like that they give that option because everyone’s tastes are different. These would’ve been great with some salsa, avocado or hot sauce too!

IMG_0089-1For breakfast the next day, I tried the Mixed Berry Chia Pudding. This one has organic chia seeds, maple syrup, blueberries, raspberries, almond milk and sea salt. The directions recommend heating this up, either by microwaving or other methods which is great for people who don’t have a microwave. However I think you could also eat this as a chilled pudding as either a breakfast or a dessert. It was great warmed up because the flavors of the berries infused the entire chia mixture, and it was just as filling as oatmeal. I want to start incorporating more chia puddings into my diet

IMG_0384-1The next meal I tried for dinner was the Smoky Kidney Beans with Dino Kale. Along with the Fiesta Black Beans, these had an incredible aroma. For a dish with such simple flavors, it was surprisingly tasty and really filling. As Fresh N’ Lean describes about their meals, they are not about being low-calorie or low-carb, but rather about being nutrient-rich. This one has a ton of protein and fiber while being low in fat and (more importantly) chemical/preservative free!

IMG_0346-1IMG_0357-1I really enjoyed the Hearty Granola, which actually packs 2 servings in one container. Normally I don’t go for granola because a lot of brand add extra unnecessary ingredients such as honey, oils or even extra flavorings. For this granola, you obviously don’t need to heat it up to prepare it. This is one of the few meals from Fresh N’ Lean that will have you add your own ingredients. They recommend non-dairy milk and some fruit to make it a full meal. For this serving, I used half the container of granola with some unsweetened flax milk and fresh berries. Talk about a quick breakfast!

IMG_0607-1We’ve been getting a lot of rain lately, despite it being spring/summer so these warm meals have been ultra-comforting (but still totally healthy). These Indian Spiced Lentils came in a surprisingly large serving size, in fact it was almost tricky to finish these off. However, this meal packs 20g of protein, 14g of fiber and only 5g of fat with very little sodium. That makes it healthy for not just our hearts, but for our entire bodies!

IMG_0726-1 The Italian Chard with Millet was definitely a new one for me. I’ve never actually had something with millet that I can remember. This reminded me a lot of rice or quinoa in terms of texture, and it really soaked up the flavors of the vegetables. Some of my favorite vegetables in here were eggplant, bell peppers, zucchini and kale. What I love about this type of meal is that it gets you trying new foods, without needing to buy them in the store or having to prepare them. With this service, you have healthy meals ready in seconds and you didn’t even have to drive to the store for them!

IMG_0759-1 Lastly, the French Lentil Tomato Penne. Normally I don’t think of having a meal with lentils AND pasta, but it ended up being super filling, protein-packed and chewy. The pasta is even gluten-free, though I honestly couldn’t tell from the taste. This meal was higher in calories than the others, but I really wasn’t paying attention to those because I knew these were super nutritious and good for me. In my opinion, it’s more about the quality of the ingredients than the quantity of calories. I noticed that this left me feeling full into the night, and I didn’t feel the need to snack at all after dinner. Because of this, I also slept soundly hours after having such a hearty but light meal. When we eat nourishing meals, we don’t have those strong urges to have unhealthy “midnight” snacks that often consist of junk food.

In summary, I have to say that I was really impressed with all the meals that Fresh N’ Lean provided to me to try out and review. This is a service I would highly recommend to anyone looking for super healthy and easy-to-prepare meals. Wow, were these super flavorful! As World Peas states, this variety includes a rich, slow-roasted tomato — or pomodoro — and garlic flavors of our TomGarlic Peas bring Sicily’s sea breezes and sun-drenched, volcanic soils to mind. I couldn’t have said it better myself! This flavor reminds me a little of pizza, but in a much crunchier form. Of all the peas, this is a great variety to try and share with others…or maybe you won’t want to because they’re so good!

I was also really eager to try the Bombay Curry-flavored snacks. These have a warm, lightly spicy curry taste that is unlike many other typical snacks you find. As World Peas suggests on the website, these would be great with some hot or iced tea to calm down the spices a bit. I think if you made a soup with curry, these would be a great topper for that as well.

Ultra-Rich Fudgy Brownies - Gluten-Free & VeganBrownies are amazing…am I right? Whether you’re a cake brownie or fudgy brownie lover, there’s a sweet treat for everyone! I’ve made my fair share of brownies in the past, but I’ve hardly ever ventured into the gluten-free territory. Using some products from Madecasse and TigerNuts gave me the chance to experiment with a vegan and gluten-free fudgy brownie recipe! Even further, I was able to make these completely nut-free as well. Now, regardless of if you’re vegan, or if you can’t consume gluten, dairy, eggs and/or nuts you can still enjoy these fabulous and ultra-fudgy brownies! Continue reading

Ultra-Rich Fudgy Brownies - Gluten-Free & VeganOne of the things that makes a big difference when it comes to chocolate desserts is quality. I am so thankful to Madecasse for sending some samples of their chocolate bars (full review coming soon!) and dark chocolate baking discs. These 70% cocoa discs are excellent for melting, because they have a super smooth consistency and the shape helps prevent burning in my experience. I even had some of their pure vanilla extract to keep the quality as high as possible.

Ultra-Rich Fudgy Brownies - Gluten-Free & VeganAnother product I was recently sent to try out in some baked goods was this Gluten-Free TigerNut flour from Organic Gemini. I also got the chance to try out and review their horchata beverages and more right here recently on my blog! Unlike almond or peanut flour, this happens to be completely nut-free as well which makes this recipe friendly for virtually anyone. I loved the fact that the flour kept these brownies soft, without making them crumbly. The flavor of the TigerNut flour was fairly neutral, which is why I can’t wait to try it in some more baked goods!

Ultra-Rich Fudgy Brownies - Gluten-Free & VeganAnother awesome part of being vegan is that your recipes are already free of dairy, eggs, and meat, which are some of the common allergens. Something else that people often associate with veganism is cutting out gluten. Though I am not sensitive to gluten, I know a lot of people who are. Being the type of person who likes to share my food with friends and family, it’s important to me to be flexible and have some allergen-friendly recipes at the ready. I found that these were super easy to make, and my dad (who isn’t vegan or allergic to gluten) didn’t even know the difference. In fact, I still don’t think he knows that these were made with TigerNut flour.

Ultra-Rich Gluten-Free, Fudgy Brownies
Serves 9
An incredibly rich, fudgy brownie that also happens to be nut-free, gluten-free, dairy-free and vegan!

Ingredients
  1. 1 cup Madecasse 70% Baking Discs (or dark chocolate chips)
  2. 3 Tbs applesauce
  3. 3 Tbs coconut oil
  4. 1/2 tsp salt
  5. 3/4 cup vegan sugar
  6. 1 tsp vanilla extract
  7. 2 egg replacers (I use Ener-G)
  8. 3/4 cup + 2 Tbs TigerNut/Gluten-Free Flour
Instructions
  1. 1. Preheat the oven to 325ºF, and prepare an 8x8 baking dish with foil or by lightly greasing. Using a double-boiler pan over water at medium/low heat, begin melting the chocolate. Once it starts melting, add in the coconut oil and salt, stirring quickly. Once the mixture becomes incorporated, add in the applesauce quickly and remove from the heat.
  2. 2. Stir in the vanilla, and sugar. Prepare vegan eggs according to instructions and add to the mixture, half at a time. Add the gluten-free flour in parts, until a brownie batter forms.
  3. 3. Pour into the prepared pan and bake for 25-30 minutes, making sure that the brownies are cooked all the way through. Allow the brownies to cool before removing from the pan, cutting and serving.

TigerNut Horchata, Granola and More

IMG_5085Ever heard of TigerNuts? First off, despite the name they’re actually completely nut-free. Organic Gemini has a line of products made with TigerNuts that are also gluten-free, non-gmo, organic, paleo and vegan. What’s great about these little root vegetables is that they have a ton of fiber, fiber and potassium along with some other vitamins and nutrients. Organic Gemini sells their Original Raw TigerNut snack, that unlike products from other TigerNut brands on the market are not treated with chemicals in the peeling process. IMG_5061One of the products I was really excited to try since I was at Expo West was the TigerNut Horchata. I’m amazed at how many flavors they offer, from Strawberry and Banana to Coffee and Chai. These drinks as well as the Unsweetened and Original are great on their own, or they make a delicious addition to smoothies! My favorites, personally are the Banana, Coffee and Strawberry (either on their own or otherwise). There are literally endless ways that you can enjoy these to replace nut-based or dairy milks, you can even use them in your morning coffee or have them with a bowl of cereal or baked goods.

IMG_5107The Raw Snack is lightly sweet with a taste that reminds me of nuts. I like the fact that per serving these actually have a lot less fat but they have a good amount of fiber and vitamins that most nuts don’t have. Because these are starch-based, I find that they also keep me feeling full a lot longer. Plus I love the fact that you can feed these to anyone, without worrying that they might have a nut allergy. I can’t wait to post a gluten-free recipe using the TigerNut flour!

IMG_5150The TigerNut Granola is incredible! I can’t believe that it’s raw and made by dehydrating in order to preserve the nutrients. It comes in two flavors: Banana Cacao and Apple Cinnamon. Both have an excellent sweet, flavor but they are a lot more filling and crunchy than standard granola. In terms of texture, they remind me of a sweet cracker that becomes softened if you pour some of the Horchata over it, which happens to be a delicious breakfast!

IMG_7819My favorite of the granolas personally is the Apple Cinnamon, which honestly tastes like a sweet graham cracker with its crunchy texture. I love to use the granola to top my smoothies, or as a quick snack when I’m taking a break from working. For the photo above, I was all out of my TigerNut Horchata so I used coconut milk as a non-dairy and nut-free alternative. I had the granola with the non-dairy milk and some freshly cut apples cold, but you could probably also warm up the milk and apples and have it that way as well…I bet it would taste even more like apple pie if you did that and added some cinnamon!

I recently discovered the Veganic Brown Rice Crisps Cereal which have been a great breakfast when I’m wanting something more than a smoothie (and don’t even get me started on their Cacao Crisps). With vegan marshmallows, peanut butter, caramels, rice crisps and baking chocolate on band…I went a little crazy. I came up with these 3-layer vegan and gluten-free treats that are vegan and omnivore-approved. Seriously, my mom took most of these with her to work and they were gone in no time. Chocolate, Caramel and PB Rice Krispy Squares - Vegan and Gluten-free! @anotherhungryvegan.comGrowing up, I used to love Rice Krispy treats. I found out through blogs like Fettle Vegan that it’s actually really easy to make a vegan version of them! I had some Dandies (aka vegan marshmallows) given to me from Expo West that were just begging to be used for this recipe. For the marshmallow portion the only other ingredients you need are some vegan butter, such as Earth Balance, and vegan crispy rice cereal.

I don’t even know where to begin with these. I’ve had my dad try them, and normally he can’t stand coconut, but he kept asking me for more pieces! They come in four different flavors: Original, Sea Salt, Vanilla, and Espresso, and honestly I don’t have a favorite because they’re all so good! For the middle layer of these bars, I mixed some melted Cocomels with PB for a sweet and salty addition. The caramels melt like any non-vegan variety, and the flavors are super versatile.

I’ll be doing a review of their chocolates on this blog soon, but Madecasse was super sweet to send me a few of their best selling bars and some baking discs. Like the Cocomels, the baking discs melt down super quickly when you use a double broiler on the stove (the tricky part is just making sure to not let anything burn). They add a lovely rich, dark chocolate taste to tone down the sweetness of the other flavors in the bars. I can’t wait to experiment with more of these baking discs in the future!

A decadent sweet and salty treat that has all the best flavors in one bar!

Ingredients
  1. 2 Tbs Earth Balance Buttery Spread
  2. 1/2 bag Dandies Vegan Marshmallows
  3. 3 cups Brown Rice Cereal
  4. Splash non-dairy milk
  5. 1 Tbs water
  6. 1 package Vanilla Cocomels (or 11 Vegan Caramels)
  7. 1/2 cup salted, smooth peanut butter
  8. 6 oz dark chocolate (I used Madecasse's 70% baking discs)
Instructions
  1. Heat a saucepan on medium and add the vegan butter until it melts. Add in the vegan marshmallows, and continue stirring until they liquify being careful not to burn. Add in a splash of non-dairy milk if needed. Once the mixture is smooth, remove the pan from the heat and stir in the brown rice cereal until well-mixed. Place in a square, 8x8 pan and flatten to form a bottom layer. Put in the fridge to let the marshmallow and rice cereal layer cool.
  2. Meanwhile begin making the caramel and peanut butter sauce. Placing the water in a saucepan over medium low heat, slowly add the unwrapped Cocomels and continue mixing until the caramels melt. Once melted, add in the peanut butter and stir rapidly. Add a little non-dairy milk if necessary. After the mixture has combined, pour over the rice/marshmallow layer in the chilled pan and smooth across the top. Place the dish back in the fridge to allow the second layer to cool.
  3. For the chocolate, simply boil a pot of water over the stove. Using a double broiler pan, place the chocolate in the top and stir constantly until the chocolate melts. Be very careful not to let the chocolate scorch or burn. Once melted, pour the mixture over the PB caramel layer.
  4. Place the square baking dish back in the fridge for a few hours before cutting into it and serving the bars. Cut into 9 squares, or make 18 smaller rectangles since these bars are rather rich, and enjoy!
