I Love Amy’s Kitchen Veggie Burgers

Amy's All American BurgerOut of all the products I could choose from, the All American Veggie Burger really caught my eye. Not only are these burger patties super versatile, they’re also really easy to find in most stores around me (even Target!). Each patty has 13g of plant protein, and it’s good just on its own! I decided to get a little creative with these burger patties for some great summertime meal options. All you need is a grill, some burgers and a few other options to throw this all together!

Amy's Burger KabobsWhen I think “BBQ” or “summer”, I immediately think of kabobs! This is such an easy method to get in more veggies in a fun way, and the more colorful the better! Here’s what you’ll need to assemble kabobs on 2 skewers:

  • 1 Amy’s All American burger patty, slightly heated to thaw
  • 1 or more bell peppers (any color you like)
  • Red onion, cut into larger-width slices
  • 1 Portobello mushroom cap

To assemble the kabobs, simply slide all ingredients on one-by-one and alternating in any order that you like. For more flavor you can marinate the mushrooms in some soy sauce, however grilled veggies on their own happen to have a lot of flavor! Place in a grill roasting pan or right on the barbecue rack and grill until the peppers become lightly charred on the ends. I like to cook these alongside a cob of corn and grill them at the same time.

IMG_0347I also made a delicious oil-free and gluten-free avocado mayo for some coleslaw to go on the side. Traditional coleslaw works fine, but I’ve been into broccoli slaw for the extra crunch and find it a little easier to chew (also with less time needed to soften the pieces for this coleslaw). Here’s what you need for a side serving of slaw to feed two people:

  • 1 medium, ripe avocado
  • 1-2 tsp lemon or lime juice (depending on how tart you like it)
  • agave to taste (optional, but helps offset the sourness of the lemon juice)
  • 1/4 cup loosely packed cilantro or parsley (also optional, but gives it a nice fresh flavor)
  • salt and pepper to taste

For this mayo, simply place all ingredients in a blender until well combined. If you need to thin it out at all, add a little water at a time. Once it’s ready, immediately pour over 1-2 cups of traditional coleslaw mix or some broccoli slaw (which you can find at most stores, even Target). I recommend chilling this for 30min, because any longer may brown the coleslaw (because of the avocado). Serve as a side dish with some fresh-off-the-grill goodies!

Amy's BurgerAs a less-traditional but still delicious variation on a burger, I love to use some grilled portobello caps to replace the bun. For these burgers, just place a portobello cap and veggie burger patty on the grill until cooked throughout. Carefully slice the mushroom in half (for the two bun halves) and assemble the burger with your favorite toppings. If you like mushrooms, this is a great way to start eating more of them. Plus it looks just like a bun, so you might even be able to trick kids into trying a few bites!

Sunshine Burgers

IMG_9949Sunshine Burgers sent me coupons for a few of their burger varieties that I hadn’t tried yet. I was so excited to find the original Quarter Pound, Falafel, and more. I’ve already done a short review on their newest Loco Chipotle burger, which you can find here on my blog. These burgers are all a great organic, gluten-free, soy-free and healthy option for when you want a burger with clean and tasty ingredients. Continue reading

IMG_2714First, I’ll begin with the Original Sunshine Burger. This burger, luckily is already fully-cooked and browned so you just have to heat it up before eating. I made this burger for my mom on a whole grain bun, with lettuce, red onion, tomato, condiments and a pickle. She said this was really tasty and while it was an “indulgent” sort of meal, she still felt energized after eating it.

IMG_6300First, I’ll begin with the Garden Herb which is just one of the varieties I started out with. This one has a nice, nutty flavor combined with fresh herbs that goes great on a burger with tomato, avocado, red onion, lettuce, and condiments of your choice. These burgers are so natural that you can see the ingredients along with their green color within the patty itself!

The Garden Herb burger even makes a great “meaty” taco filling. Just crumble up the burger and sauté it in a pan with some avocado/olive oil, onion, garlic and bell pepper or other veggies and that’s it! This also happens to be a gluten-free and filling meal.

I really couldn’t wait to try this Mushroom burger. It’s funny that before going vegan, I couldn’t stand mushrooms. Now I think they add a nice flavor and “meaty”, chewy texture that is a great ingredient in veggie burgers. For another gluten-free option, I heated this burger in a pan with garlic and onion, stir-fried vegetables and rice seasoned with tamari sauce. This was super quick and full of good ingredients that most of us have on hand already. By the way, the mushroom burgers also make a fantastic actual burger if you want to try that instead.

No bun? No problem! The Barbecue burgers, which ended up being my mom’s favorite, make a great open-face burger on top of a bed of lettuce. The toppings included pickles, avocado, onion, tomato, ketchup, mustard and some Moroccan Fusion kraut from a local company. Just FYI, these burgers also great with some zucchini fries on the side.

Lastly, I was inspired by the Falafel burger to make a stir-fried rice with onion, veggies, rice and this Garlic Lentil Dip made by Hope Foods. This is a healthy meal option that’s also quick and super delicious. If you like falafel, I definitely recommend this burger that would also be a great addition to a wrap or sandwich with some hummus and veggies.

Loco Chipotle Sunshine Burgers

IMG_9960Do you like veggie burgers? I sure do! Unfortunately a handful of the ones you find in the store contain gluten or some kind of wheat. Since I’m going gluten-free this month, I figured it was the perfect time to try out Sunshine Burgers. To make it more of a challenge though, I decided to prepare them in a non-traditional burger way. Sunshine Burger recently came out with these Loco Chipotle veggie burgers that I couldn’t wait to try. They come in a quarter-pound size, which is really unique for a veggie burger but perfect for those times when you’re extra hungry! I am no stranger to sunshine burgers, but I am always able to come up with fun (and easy) ways to make a meal out of them. I would definitely recommend not just this flavor burger, but all the the sunshine burger varieties I have tried so far. I absolutely love the fact that they are made with organic ingredients and contain no weird ingredients that you wouldn’t find in your own kitchen. I wanted to try these out this month because along with being organic and gluten-free, they are also soy free, non-GMO, and really tasty too!

I came up with this taco-less taco (or taco salad) idea since I figured the jalapeño, green pepper, cilantro, chipotle pepper and cumin in the burger would compliment it quite nicely. I heated one of the patties and then topped it with these Better Bean refried black beans, red onion, tomato, avocado, and daiya cheese on top of greens. Like I said this is basically a taco without the shell, but I can assure you all the flavors are there! This is an incredibly filling meal thanks to the beans in the burger and on top, and the toppings add extra flavor and you can customize it however you like. For your next taco night, why not give these Loco Chipotle burgers a try?

IMG_0069Another almost-taco related food I love are nachos. I could literally eat these any time of the day because they’re super quick to throw together and they’re great for sharing. What’s nice about these is that most corn tortilla chips are already gluten-free, the trick is usually finding a vegan “meat” substitute that is also gluten-free. I heated and crumbled up the other Loco Chipotle patty, then mixed it with the refried black beans on top of these Garden of Eatin’ yellow tortilla chips, melted Daiya cheddar style shreds, red onion, homemade guacamole and salsa. This literally took only minutes to prepare and it’s a definite crowd pleaser, especially for anyone who is vegan and/or can’t eat gluten. Why not give these a try the next time you have people over for game day?
